Lemon Cake Recipe

Ingredients
A
180g castor sugar
4 eggs
grated rind of 1/2 lemon
1 teaspoon lemon essence
B
130g cornflour
130g plain flour
a pinch of salt


250g butter - melted and cool slightly
100g raisins


Method
1. Warm ingredients A in a stove for 5 min. Remove from stove and whisk till cool.
2. Sift ingredients B together. Fold in melted butter, ingredient A and raisins.
3. Pour batter into a greased loaf tin. Bake in preheated oven at 190 deg C for 40 min.

    I tried this recipe yesterday. Didn't really turn out as expected. Perhaps my folding skill is not good enough. Too many bubbles resulting in a cake with a little too many holes. Will try again when I figure out what went wrong.
    Oh i substitute the raisins with Hershey's mini chips. But the hot weather melted the chips when I added it to the batter. LOL!!!
    Needs more improvement. :P
